Zucchini and Cauliflower Fritters (SCD, Paleo, Gluten-Free)

  • Awesome for breakfast or lunch
  • Leave out cheese to make it dairy-free
  • Makes eight fritters (app. 3 1/2" in diameter)

Half head cauliflower
2 eggs
Half of a zucchini, grated
2 tablespoons grated firm cheese (optional)
salt and pepper

-Cut your cauliflower into individual florets and pulse in your food processor until the texture of couscous
-Pour cauliflower into a microwave-safe bowl and microwave on high for 2 minutes
-Stir through the cauliflower and microwave for another 2 minutes
-Squeeze as much moisture as possible out of the cauliflower using a cheese bag or dish towel (be careful, it'll be real hot)
-Mix together all ingredients in a bowl
-Melt butter or olive oil in a medium-hot frying pan and spoon fritter mixture into pan, using the back of your spoon to spread each glob into a flat fritter shape
-Cook for 4 minutes on each side

Serving suggestions:

-Pan-fried prosciutto (it's easy to find SCD legal prosciutto - usually the real Italian brands are just pork and salt)
-Mayo, aioli or chutney (make one yourself or by the best sauces ever from Roza's Sauces)
-Herb side salad
-Pan-fried tomato halves
