- Makes 12 muffins
3/4 cup applesauce (buy unsweetened from the store or make your own)
3 eggs
1/4 cup honey
2 teaspoons vanilla
2 1/4 cup almond meal
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon cloves
-Preheat oven to 180C/375F
-Thoroughly mix applesauce, eggs, honey and vanilla
-Mix in baking soda, cinnamon and cloves
-Mix in almond meal
-Coat cups in a regular muffin pan with SCD safe cooking spray, oil or butter
-Divide batter evenly between twelve muffin cups
-Bake for 20 minutes or until dark golden and springy in the middle
-Allow to cool before removing from the pan
