- Makes 12 cookies
1 cup almond meal
1/4 cup honey
1/2 teaspoon salt
1 teaspoon vanilla
1 tablespoon olive oil
-Preheat oven to 200C/392F
-Mix all ingredients together in a small mixing bowl
-Roll into 1/2 tablespoon balls and place evenly apart on tray
-Press a whole almond into each ball
-Bake for 8 minutes (these go from perfect to burnt really quickly, so watch them!)
-Allow them to cool for a couple minutes before removing from tray/eating
