- Refreshing, tangy and creamy top layer

- Makes 12 mini cupcake-sized bites
Base
5 Medjool dates, pitted
1 tablespoon dessicated coconut
2 tablespoons almond meal
1 tablespoon coconut oil, melted
-Line a mini cupcake tin with 12 liners
-Combine all ingredients in a food processor and pulse until pretty smooth
-Divide evenly between 12 cups and pack it in
-Set aside and make the lime filling
Lime Filling
1/4 cup cashew butter
3 tablespoons lime juice
1 tablespoon SCD homemade yogurt or Homemade Coconut Yogurt (optional - if you don't have it, just leave it out and live without the slight sourness it gives the filling)
1 tablespoon coconut oil
1 tablespoon honey
Zest of one lime
-Beat all ingredients together in a stand mixer, with a hand mixer or a food processor
-When it's super smooth, pour over each of the 12 date bases
-Freeze for at least two hours before serving - you can keep the liners on or peel them off like the photo above!
Note: These thaw out quickly, so they should go directly from freezer to mouth
