- Give Subway's cookies a run for their money!
- Super quick and easy, requiring just one bowl
- Makes 12 cookies
2 cups almond meal
1 tablespoon nut butter (preferably macadamia butter or cashew butter)
1/2 teaspoon salt
1 teaspoon SCD-safe vanilla extract
1/2 cup honey
2 tablespoons cocoa butter
1 tablespoon oil
1/3 cup chopped macadamia nuts
1/3 cup chopped macadamia nuts
-Preheat oven to 190C/375F and line a baking tray with baking paper
-Melt cacao butter in the microwave (about a minute and a half)
-Mix all ingredients together (it's a thick batter, so you may want to use an electric mixer - if you do, leave the nuts out and mix them in by hand after it's all combined)
-Roll into 12 equal balls, place on the sheet, then flatten them into discs
-Bake for 12 minutes and allow to cool completely before removing from the tray
