Chewy Ginger and Spice Cookies (SCD, Paleo, Gluten-Free)

  • Soft, chewy and perfectly spiced
  • If you don't have pecan flour, use any other nut flour
  • Makes app. 8 cookies

1 cup pecan flour (just throw some pecans in the food processor)
21g/1.5 tablespoons butter
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon SCD-safe vanilla
1/2 teaspoon finely smashed fresh ginger
1/4 teaspoon ground cloves
1/2 teaspoon cinnamon

-Preheat oven to 180C/375F and line a baking sheet with baking paper
-Mix all ingredients together (you may need to use an electric mixer to cream the butter)
-Plop onto the tray into about 8 balls
-Bake for 15 minutes and allow to cool completely before removing
