Best SCD and Paleo Banana Bread (SCD, Paleo, Dairy-Free, Gluten-Free)

  • Absolutely perfect texture and taste
  • Makes one loaf

2 very ripe bananas, mashed
1 cup almond meal
1/4 cup coconut flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
2 eggs
1 teaspoon vanilla
3 tablespoons coconut oil
3 tablespoons honey
1 tablespoon apple cider vinegar
1/2 cup chopped pecans or walnuts

-Preheat oven to 180C/375F
-Mash bananas in a large mixing bowl
-Melt coconut oil and honey in a microwave-safe bowl
-Mix all ingredients together well
-Pour into loaf tin and bake for 35-40 minutes
-Allow to cool completely before tipping out and eating; personally, I think this is best after a whole day of resting - the banana flavour really develops!
