- Makes 8 'Fig Newtons'
1 cup almond meal
2 tablespoons honey
2 tablespoons olive oil
1/4 teaspoon salt
4 tablespoons of Homemade Fig Jam
-Preheat the oven to 200C/392F
-Mix together almond meal, honey, olive oil and salt
-Roll dough out into a rectangle, app. 10"/254mm long and 4"/101mm across, between two sheets of baking paper
-If you made fig jam in advance, heat up your 4 tablespoons of it in the microwave of 30 seconds (it's easier to spread when it's warm)
-Carefully spread fig jam down the middle of the dough rectangle, leaving about an inch on each side
-Fold dough lengthwise over the fig jam on each side (I use the baking paper to help me) and tuck in the ends to seal the parcel
-Roll the log over so the seams are on the bottom
-Bake for 18 minutes
-Allow to cool then slice into app. 8 'Fig Newtons'
