Peanut Butter and Jelly Parfait with Cookie Crumble Topping (SCD, Paleo, Gluten-Free)

  • Decadent treat for PB&J fans
  • Incorporates popular Peanut Butter Satin recipe from SCD Recipe
  • Makes one parfait

Cookie Crumble Topping

1/4 cup almond meal
1 tablespoon butter
2 teaspoons honey

-Preheat oven to 200 C/392 F
-Pulse ingredients together in a food processor until they form a crumbly texture
-Sprinkle onto a baking sheet and bake for app. 6 minutes (or until golden)

Peanut Butter Satin
(original recipe from SCD Recipe)

1/4 cup peanut butter
1/4 cup butter
1/8 cup honey
1/2 teaspoon vanilla extract
2 eggs

-Beat together peanut butter, butter, honey and vanilla with a electric bowl mixer or hand mixer
-Add eggs one at a time, beating on high speed for five minutes after each addition

Berry Jam
(this is for one parfait serving but I recommend making a quadruple batch so you'll have jam on hand!)

1/2 cup blueberries, strawberries or whatever you like (fresh or frozen)
1 tablespoon honey
2 teaspoons lemon juice

-Crush blueberries with a fork or masher utensil
-Combine crushed berries, honey and lemon juice in a small saucepan and bring to a boil
-Turn down the heat and let the mixture simmer for 10-15 minutes or until it thickens to your liking


-Layer peanut butter satin and berry jam in a pretty glass
-Top with cookie crumble
-Allow it to chill in the fridge if you want it cold or eat it right away!
