Banana and Walnut Muffins (SCD, Paleo, Gluten-Free)



  • Satisfying, bready texture that's hard to achieve with SCD baked goods
  • Moist and slightly sweet
  • Only one mixing bowl needed
  • Awesome with Homemade Coconut Yoghurt
  • Makes 12 muffins

3 eggs
2 very ripe bananas
1/4 cup honey
2 teaspoons vanilla
1/2 cup SCD homemade yogurt or Homemade Coconut Yoghurt
2 cup almond meal
2 teaspoons baking soda
1/2 cup chopped walnuts

-Preheat oven to 200 C/392 F
-Butter each cup of a regular sized muffin tin
-Mash bananas very well in a medium mixing bowl
-Add eggs, honey, vanilla and yogurt and mix well
-Add baking soda and almond meal and mix well
-Stir in chopped walnuts
-Spoon evenly into twelve buttered muffin cups
-Bake for 15 minutes
